I personally vote two as, like everyone else I have spent some time working on my island. But. If it is less work for you, Chase, then 1 as I don't want you to work overly too much.

I dont play skyblock so dont take my opinion as a vote, however, the Island seems gnarly huge now. I could see why some people would want a restart. However, alot of people arent done building their massive sky castle and even if they are, they dont want to see such hard work destroyed.

mcMMO is the thing where say for example you're mining as you mine you level up. When you level up more and more you can use Super Breaker which breaks the blocks faster as you mine. (I really hope this made sense...)

i would choose 3 because i like mcmmo and skyblock and the combination is great i also think that another good challenge could be something to do with ore like you have to have every single type of ore block placed on your island or something idk lol
